1 onion, diced
2 garlic cloves, finely chopped, optional
Salt & pepper
1 tbsp tomato puree
1 tsp sugar
1 tsp dried oregano

Make your own fresh tomato sauce the easy way and use it over and over in recipes. The kids will love making (and eating) this one!
Method:
Blitz the tomatoes. (Don’t have a mixer/blender? Chop them roughly until the pieces are small and juices are flowing, mashing slightly with the knife as you go.)
Set a saucepan over low heat and add the olive oil. Once it is hot, add the onion and season with salt and pepper, then cook gently for 5 mins or until softened and translucent. Add the garlic and cook for another 30 seconds, then add the tomatoes, tomato puree, sugar and oregano. Cover the saucepan with a lid and simmer over low heat for 30 minutes, stirring occasionally. Taste and add seasoning if needed, then blitz in a blender or with a hand blender until smooth.
