Ingredients:
2 large potatoes and 2 large sweet potatoes, washed and chopped into bitesize pieces (peel if you like, but it’s not necessary)
2 leeks, washed well and sliced
4-6 sausages (pork or vegetarian)
3 tbsp olive or other oil
2 tsp dried mixed herbs, oregano or thyme
Salt and pepper, to taste
2 medium-large apples, washed and chopped into bitesize pieces (peel if you like, but it’s not necessary)
Who doesn’t love a one-tray meal? This leek and sausage traybake is balanced, delicious, sweet enough for kids to love, and packed with veg!

Method:
Preheat oven to 200C/gas 6. Spread out the potatoes (white and sweet) and leeks on a baking tray and drizzle over the oil, herbs and seasoning. Mix gently, then lay the sausages on the top of the veg.
Roast for 30-40 mins, until sausages are cooked and potatoes are cooked, softened and starting to go lightly golden. Add the apple pieces and return to the oven for 10 mins, until apple is heated through and starting to soften slightly.
