Ingredients:
8 slices of bread
Unsalted butter
2 tbsp basil pesto, optional
2 handfuls grated or thinly sliced Cheddar or similar hard cheese
2 large ripe tomatoes, sliced thickly
Whether you have an air fryer or just pan fry these toasties, they are so simple, kid-friendly and delicious, they are well worth making! Get the kids involved with buttering the bread and layering up the ingredients – the more involved they are, the more likely they will eat it.
Method:
Thinly butter one side of all of the bread slices. Turn 4 of the slices butter side down (doing this on greaseproof paper means less chance of sticking) and add a little pesto to the other side, if using. Layer up with some cheese and tomato slices and then top with the other buttered pieces of bread, butter side up.
Cook in air fryer at 190C for about 8-10 mins, flipping halfway through, until the bread is toasted and cheese is melted. Great served with a colourful chopped salad, some slaw or on the side of soup!
Don’t have an air fryer? Try heating a frying pan over medium heat and fry the buttered sandwiches on each side, pressing gently down with a spatula, to get them golden and melty.
