Need an easy snacktime win? Get more veg from plates to bellies with our creamy pea pesto dip to scoop up with carrot sticks, sliced peppers, or plain tortilla crisps!
[If you don’t have a blender, just mash the ingredients together with a fork– it will be a chunkier dip, but will be just as delicious!]
Method:
Defrost your peas, either by letting them sit at room temperature for around half an hour, by microwaving them for a minute, or by covering them with boiling water and draining.
Chuck the peas in a blender along with the cream cheese, pesto, and salt and pepper to taste (and lemon zest and juice if you want to brighten up your dip).
Blitz until smooth, and your dip is ready to be scooped up with whatever you fancy.
P.S. This also makes a wonderful sauce for pasta!
