Ingredients:
200ml semi-skimmed, or soy milk
100g Greek yogurt or soy yogurt
2 tsp honey or maple syrup, or to taste
1 tsp vanilla extract or to taste
45g chia seeds
200g fresh blackberries or other berries
To serve:
Fresh berries / yogurt
This is a simple high-fibre breakfast option to support digestive health and help keep you feeling full through the morning. Make it the night before to allow time for the chia seeds to soak up the liquid. It is ideal for a grab-and-go breakfast, when time is short in the morning.
Method:
In a jug mix together the milk, yogurt, honey or maple syrup, vanilla extract. Stir in the chia seeds. Let sit and gel for about 10 minutes. Stir again, cover and store in the refrigerator overnight.
Place the blackberries or other berries in a pan with a splash of water and simmer for about five minutes. Stir every so often and break up the berries with a wooden spoon or spatula. Allow the berries to cool, spoon them into a container and chill overnight.
In the morning stir the chia pudding – add a little milk to thin if needed. Assemble the chia pudding and berry sauce in layers in jars, or bowls. Top with fresh berries and a spoonful of yogurt.
