Ingredients:
1kg large ripe tomatoes, roughly chopped (the darker and riper, the better the soup will work!)
1 red pepper, roughly chopped (optional)
2 cloves garlic, peeled and crushed
4 tbsp (olive) oil
Handful of fresh basil or 2 tsp dried basil or Italian herbs
50ml single cream, optional (but delicious!)
Tomato soup is often one of the easiest soups to get kids eating. Try making your own with our easy roasted tomato soup with this simple two-step recipe. Kids will love helping to toss the ingredients together before roasting or pushing buttons on the blender!
Method:
Preheat oven to 200C/gas 6. Toss the tomatoes with the garlic, red pepper if using, and oil. Season to taste with a little salt & pepper, if you like. Roast for 25-30 mins, until softened and starting to brown lightly.
Allow to cool slightly, then blitz until smooth and serve with the basil and cream if using. Perfect with cheese toasties (cut into strips for egg-and-soldier-like dipping for kids).
