Ingredients:
1 pack (400-500g) cherry tomatoes
2 cloves garlic, peeled
4 tbsp (olive) oil
2 balls (250g) burrata or fresh mozzarella
Salt & pepper to taste
1 tsp lemon zest, a few pine nuts & a handful roughly chopped fresh basil to serve, optional

Need a super simple pasta dinner the family will love? Toss some tomatoes with garlic and oil, add some cheese, bake then stir through pasta! Go ultra-creamy and decadent with burrata, or keep it simple with mozzarella. Either way, this easy meal is a joy to make and eat.
Method:
Preheat oven to 200C/gas 6. Toss cherry tomatoes, garlic, olive oil, and a block of burrata into a baking dish. Season with some salt & pepper for extra flavor if you like. Roast for 25-30 mins until everything is soft and lightly caramelised.
Meanwhile, cook the pasta according to package instructions. Drain the pasta over a mug to catch some of the pasta cooking water.
Stir the cooked pasta into the cheesy tomatoes to coat everything in a creamy, melty sauce. Add a little of the pasta cooking water if it needs it – this is more likely with mozzarella than burrata.
Serve with a little bit of grated lemon zest and some fresh basil and pine nuts if you like bolder, fresh flavours and some colour to your meals!
