Ingredients:
500g Brussels sprouts
Oil
Salt
Optional extras: grated parmesan, balsamic vinegar or soy sauce, cooked chestnuts, cooked bacon lardons, roughly chopped fresh herbs
Method:
Preheat oven to 190C/gas 5. Cut the stem off the bottom of the sprouts, peel off the outer layer, and halve each one. Toss with a tablespoon of oil and a small pinch of salt, then lay out on a baking tray, making sure they are well spread out and not packed too closely together.
Roast in the preheated oven for 20-30 mins, until the sprouts are going golden brown on the outer edges and are softened but still have a little bite to them. Serve as they are, or add an optional extra like a drizzle of balsamic vinegar, grated parmesan or other cheese, some cooked chestnuts or bacon – ideally something a little bit sweet to balance the flavour of the sprouts.
