Simple Sautéed Peppers

Ingredients:

3-4 peppers, de-seeded and thinly sliced

a little oil (about 1-2 tbsp)

a small pinch of salt and some dried herbs or spices of choice (optional)

Method:

Heat the oil in a frying pan. Fry the sliced peppers over a low-medium heat, stirring occasionally, until softened to your liking (stop at 5-10 mins for crunchier peppers, or keep going 15 or even 20 mins for soft ones). Season with a little salt and/or dried herbs or spices to your liking.

Encouraging kids to engage and play with veg is the handy first step to them developing a good relationship with veg and life-long healthy eating.

Get kids washing the peppers and tearing them in half or even into chunks with you – they can easily do this with their hands. Older kids could help you slice them more neatly, or you can just slice the chunks they tear if they look a little bit big.
