Ingredients:

2-3 roasted red peppers (from a jar, or just make our simple roasted peppers)

A few tablespoons oil

small pinch salt

1 garlic clove, finely chopped

1 tbsp red wine vinegar

Method:

Blitz all the ingredients in a blender (or a bowl with a stick blender) until smooth.
