Making a roast and want a really easy way to add more veg with a simple side? Chuck whole sweet potatoes in the oven with the roast, then peel and mash! Is it any easier than this sweet potato mash?
Method:
Preheat oven to 200C/gas 6. Pierce sweet potatoes all over with a shark knife, then bake for 45 mins-1 hour until soft (perfect for popping on the oven shelf next to or under a roast!).
Allow to cool slightly before peeling, then mash and mix with milk and butter. Season with a little salt & pepper – and the nutmeg, if using – and serve.
Short on time? Instead of roasting them whole, try peeling and chopping the sweet potatoes into small chunks (or, even quicker, grab a bag of pre-peeled and chopped sweet potatoes from the freezer aisle at the supermarket) and boil for 10-15 mins until soft. Drain, then mash with the milk and butter. Season and serve.
