Ingredients:

1 pre-baked savoury pastry crust (or homemade baked crust if you prefer making your own)

1 onion, finely chopped

4 tomatoes, roughly chopped

Handful of fresh basil leaves, optional

150g grated Cheddar or other hard cheese

100g mayonnaise

Salt and pepper

This tomato cheese pie is a fun treat for kids to help make and eat. It’s super simple, cheap and delicious.

Method:

Preheat oven to 180C/gas 4. Make a layer in the baked pastry case of the onion, then top with a layer of tomatoes, then basil (if using). Mix the cheese and mayonnaise together, season with salt and pepper and spread as a final layer over the tomatoes.

Bake for 35-40 mins, until the filling is cooked through and the cheese is golden and slightly bubbling. Allow to cool and serve warm or cold.
