Ingredients:
2 tbsp (olive) oil
3 leeks, washed well and sliced
2-3 large baking potatoes, peeled and chopped
750ml-1.25l water or stock (adjust according to how thick/thin you like your soup!)
A little ground black pepper, to taste
4 tbsp of single cream or coconut milk, optional

Method:
In a large saucepan, fry the leeks in the oil over medium heat, stirring occasionally, until softened and darkened. Add the potatoes, water or stock and pepper, then simmer over medium heat until potatoes are soft – about 10-20 mins (depending on how small you chopped your potatoes).
Remove from the heat, blitz until smooth, adjusting with more water/stock if you want to thin it, and serve as is or with a drizzle of cream.
