This simple salsa is easy to make and delicious to eat. A great dip for veg, sauce for tacos or burritos, or an easy way to pep up a simple 'eggs on toast' breakfast and add a little veg while you're at it!
Dice the tomatoes, onion(s) and cucumber as small as you can. Roughly chop the jalapeno slices. Mix everything together. Add more jalapenos, salt & pepper, lime or lemon juice and/or coriander to taste.
