1-2 tbsp jalapeno slices from a jar (adjust to taste depending on if your family likes spice or not)
a large handful of roughly chopped fresh coriander
salt & pepper
juice of 1/2 lime or lemon

This simple salsa is easy to make and delicious to eat. A great dip for veg, sauce for tacos or burritos, or an easy way to pep up a simple ‘eggs on toast’ breakfast and add a little veg while you’re at it! Perfect for using up soft tomatoes that need eating now!
Method:
Dice the tomatoes, onion(s) and cucumber as small as you can. Roughly chop the jalapeno slices. Mix everything together. Add more jalapenos, salt & pepper, lime or lemon juice and/or coriander to taste.
Kids in the kitchen:
Dice the ingredients for them, then get them to mix everything up and taste it. Ask them if they think it needs more of any ingredients and let them add, taste and experiment until they feel it’s just right.
