Ingredients:
250g Brussels sprouts
50g flaked toasted almonds or pumpkin seeds
Handful of dried cranberries (or raisins or dried cherries)
3 heaped tablespoons mayonnaise (or a half-and-half mix with natural yogurt) or a simple honey mustard dressing
Method:
Cut the stems off the Brussels sprout, peel off the outer layer, then finely shred with a sharp knife, box grater, or food processor fitted with the fine grater. Mix with the other ingredients. If the sprouts taste is still too strong, you could mix in some other grated veg or fruit like cabbage, carrots or apples.
If you want to make a simple honey mustard dressing, just pop 1 tsp Dijon or wholegrain mustard and 2 tsp honey in a lidded jar, along with 2 tbsp cider or white wine vinegar and 6-8 tbsp olive oil. Put the lid on tightly and shake to combine.
